Rick Platt, experienced head brewer, vintner and BJCP Certified Beer Judge, set up Happy Brew Day in 2016 as a response to many peoples growing desire to understand the origins, provenance and production methods of the food they eat and the beer and wine they drink.

Acknowledging the many requests to learn how to brew beer at home, “like the professionals do”, Rick demonstrates basic brewing techniques using a traditional “3 vessel” gravity fed system, typically found in most, if not all commercial breweries.

Brewery Process

Milling

The malted barley is crushed in a roller mill to open up the husks

Mashing

Water (called “Liquor” in brewing) is then added to the crushed barley

Sparging

After the mash timings are complete, we begin the sparge.

Boiling

The sugary wort is then raised to a rolling boil

Packaging

Finally the bottles are labelled and date stamped

Cooling

The wort is then cooled to around 19 degrees C

Maturation

The fermenter is then placed in a room at an ambient temperature of around 20 degrees Centigrade

Dry Hopping

Or the addition of aroma hops to the finished beer are aded to the fermenter

Carbonation

When bottling beer an extra boost of brewing sugar or DME (dried malt extract) is added to the finished beer

As a Mini Micro brewery, The HAPPYBREWDAY beer range varies on demand, but the core range comprises of a dry Irish stout Kiss the Black, a traditional best called Browndog Bitter named after his faithful chocolate Labrador, Rocky.
A hoppy Pale Ale called Trademark Red and his latest design Taskashi Ace a refreshing Japanese style rice lager, a perfect accompaniment to spicy food and hot weather. He also brews a traditional dark mild in memory of his Lancashire roots Mild at Heart.

Wine

For many years on my trips to Piedmontese in Italy, I was knocked out by the taste and texture of Anselmo Viora’s artisanal natural wine.
 My friend Giovanni’s father had made wine from his own grapes ever since he could remember. It was part of the culture in Sciolze,  a small mountain village near Turin in northern Italy, where Anselmo was the local butcher.

Attend Classes

On Brew School days I will provide everything needed and will cover the basics with a practical brewing demonstration using raw grains, hops and basic equipment you can use at home.
The session typically runs between 4 – 5 hours and will include lunch, tea and coffee and an in depth discussion of each part of the process as we brew together.
